For this class, we will be learning how to cook Bánh xèo (sizzling pancake) using rice batter, Bánh Khọt, a crispy and savoury mini pancake, and Cá Kho Tộ which is caramelized fish braised in coconut milk.

For this class, we will be cooking
Bánh xèo, literally "sizzling pancake", named for the loud sizzling sound it makes when the rice batter is poured into the hot skillet. You will learn how to make the batter from scratch, not from the ready mix packet. Trust me, you will never go back to the ready-mix pack after you've tried this.
Bánh Khọt, a crispy and savory mini pancake that is topped with shrimp and served with lots of fresh herbs. I will teach you how to make the dipping sauce for the dish.
Cá Kho Tộ, Vietnamese caramelized fish braised in coconut milk in a claypot. It has a far wider spectrum of balanced sweet/salty flavors, with a kick of heat. Even a picky eater praises the dish. It is served with rice.
